A little background for you on this project: Mary Grosvenor and Lori Smolin first wrote Nutrition: Science and Applications to help students learn core concepts in Nutrition. After much feedback and many requests the authors felt that they needed to write a book that would address the needs and concerns of students may or may not be Nutrition majors, but who also seek a balance between the science of Nutrition and a focus on becoming more critical consumers of food and nutritional information. After an extremely successful first edition, the title is proving to be an ideal resource for students and faculty. The chapters you have before you are the result of that endeavor. To date, the text has been adopted by over 90 schools. Materials have been class tested at close to 75 schools across the country and involved over 120 reviewers.

The chapters on this site are in different stages of readiness so if you come across any mistakes it's likely we too have already caught it, but to be sure, we'd appreciate hearing from you with any mistakes that you find. Again, please email these to cstone@wiley.com.
